Descripción : Ecuador is a country with a privileged geography, where you can find all types of weather, and it is in a stage of developing new eco-touristic attractions; making the tourism business very profitable and self-sustaining nowadays. This economic sector includes, among others, restaurants business. At the present time, the tourism infrastructure and services supply is limited, very expensive or of low quality. lt is concentrated mainly on coast areas; therefore, there are great market opportunities in eco-touristic sector with national and international customers. Most of the target population lives in the big cities of the country, the customers of the project are mainly focus in Quito where the environment is highly contaminated and has few alternatives for recreational natural areas. "El Gallito Rojo" is a restaurant designed to satisfy the necessities of a selected target. lt is located in a touristic area with a profitable financial projection for investment. The approach is to create and keep a long term enterprise with a short term profit of 147,20% of the initial capital invested (40521,12). Another objective is to maintain an integrated business that generates a high utility within the next 5 years. With this strategy, it would be plausible to duplicate the enterprise in order to turn this project into a restaurant chain with strategic partnerships. The installations of the project are to be built on a 7000 m2 location, with natural areas that are close to the orchid garden situated on the riverside of the Saguambi river. The building structure includes a kitchen set, bar, indoor and outdoor tables, an ornamental, medicinal, and coffee plants vivarium, including a coffee grinding area. Due to the affluence of tourists in the area, the expected demand is of 300%, according to the peak season during holidays. The total number of customers expected during a year for lunch is 8480, that will consume an average of 14,21 dollars per person; additionally, during the morning and afternoon hours, the expected demand will be of 4240 people with an average consume of 3 dollars per person. This represents a total income of 133.186,12 dollars. Because of this analysis, the restaurant capacity will be of 50 people. The financial analysis lead us to the conclusion that on the fifth year the approximated profit of the business will be of 735,98% from the initial investment of the enterprise 25.000 dollars.
