Descripción : This thesis proposes the creation of an innovative restaurant, in which only tasting menus would be served. Thus we arrive at the idea of creating Incantare a restaurant which chef's expertise will allow him to create innovative dishes, using, if possible, Ecuadorian products. The objective was to attract a growing clientele, young-adult of the upper-middle economic class. That is, Young people who work in small businesses as senior officers or people who start their own businesses. To measure the market acceptance of our business plan, we conducted surveys of a sample of the universe of study. With these surveys we obtained very encouraging results. That is, people would accept the creation of such a restaurant as the one mentioned before. To appeal to our market, we focus mainly on an advertising campaign through social networking and creating a website. Knowing a little about the market of Quito, we know that the restaurant’s reputation is most important…
