| Descripción : | This investigation evaluated the sensory characteristics of nine varieties and three potato (Solanum tuberosum L.) clones, with two tests; the first test determined the acceptance and the second test evaluated the perception of consumption habits. In the sensory test of acceptance and preference were evaluated the varieties: INIAP-Natividad, INIAP-Josefina, INIAP-Victoria, INIAP-Libertad, INIAP-Fátima, INIAP-Yana Shungo, INIAP-Puca Shungo, INIAP-Gabriela and INIAPSuperchola and three clones, which are: Clon 07-32-15, Clon 98-38-12 and Clon 11-9-91. Yana Shungo was the variety with greater preference between sixty panelists. In addition, the results were corroborated with the statistical test “Randomized Complete Block” and Friedman, this one determined the information was not random. For the perception, The technique of social analysis was used through interviews with 60 panelists; in which 51porcent consume potatoes twice a week and 82 porcent of the judges preferred to consume it fresh. It is necessary to continue working in the sowing, dissemination and promotion of native potato varieties, for their sensory attributes, nutritional contribution and the agroindustrial potential that these varieties possess. Ecuadorian government entities are developing and strengthening programs to increase the production and consumption of this crop. |
