Descripción : Safety food has always been important for food processing industries, naturally choose a quality system that protects the products. The sanitary technical standard of Good Manufacturing Practices (GMPs) certificated by the regulator ARCSA, are those that remain in force in Ecuador since they represent a quality system that helps food companies meet requirements. This document has 6 chapters so that all the products that are made in them safeguard their quality and safety. Develop an improvement proposal for process design in the plant processing plant of the University of the Americas in Nono. First, the basic engineering model was developed, starting with the process map of the company, which details the management, mission and support processes under the ISO9001: 2015 quality system, the characterization of mission processes that represent the inputs and outputs of the process with the help of measurable resources and indicators. The process of the company was developed by BIZAGI MODELER software for the products elaborated in the vegetable processing plant detailing the steps to be taken to obtain the finished product that is commercialized in the UDLA community who has different sales points and are found in every 1 of the Universitys headquarters. The design of the UDLA farm processing plant was developed by Autodesk AutoCAD Software presenting the flows that the plant has. As part of the development of this work, a Check-list with a percentage of compliance about BPM regulations of the company is evaluated, it is categorized on a scale from 0 to 5 where 0 means that the requirement it`s totally unfulfilled and 5 is the total compliance. It was determined that the company complies with the 54.96 porcent of the standard, represents an average compliance of the same representing risk for the innocuousness of the products. Due to this percentage, it was decided to elaborate an action plan for a total of 77 items with 77 corrective actions, in which the requirements with grades of 0, 1, 2, 3 are taken into account to propose corrective actions that make the percentage of general compliance is increased above 70 porcent or a range 4 where the safety of the products are not threatened by critical factors and this can be assured for both the plant and the customer.
