dc.descriptionThe objective of this work is to make bread using semi-processed products of lupin (Lupinus mutabilis), integrating technological, nutritional and sensorial. Different formulations were developed with the paste, milk and flour of lupin, and the comparative sensorial evaluation between the white bread and the lupin bread was developed to establish correlations and differences between the organoleptic properties, besides analyzing the technological parameters used. A nutritional profile of the products obtained from the different formulations was then elaborated. Finally, it was determined that the method with which favorable organoleptic results were obtained and the greatest economic benefit was using the by-product; lupin milk.en
