Descripción : The sale of raw donkey milk in the streets of the south of Quito has grown gradually, due to the medicinal properties attributed to it. Consuming unpasteurised dairy products entails various problems for public health, which inevitably begins to affect different demographic groups of the city. The objective established in this study was identifying the presence of Staphylococcus in raw milk to determine the risk of disease relating foods (foodborne diseases), as well as the identification of residuals for Tetracycline, Sulfonamides and Beta-lactam’s by test strips. For this purpose, bacterial culture of 3M Petrifilm and test strips were used in 40 samples obtained directly from unlicensed vendors.The results obtained were from 15 positive samples to 6 different species of Staphylococcus in 3M Petrifilm cultures, along with a negative result for the total samples evaluated for traces of antibiotics with the TriSensor test. Evaluating the positive cases among the samplings performed shows 20 per cent in the first stage and 80 per cent in the second sampling stage were positive. Moreover, through an antibiogram results obtained show, 10.3 per cent manifested resistance to antibiotics, such as: Ampicillin, amoxicillin plus clavulanic acid and Tetracycline, whilst sensitivity to antibiotics shown was 89.7 per cent towards ceftriaxone, cephalexin ciprofloxacin and enrofloxacin. Despite this, the species of Staphylococcus evaluated, demonstrate that they present sensitivity and resistance to 11 antibiotics from distinct families, most predominant in beta-lactam drugs and Tetracyclines, which means that the sample obtained is limited in producing an effect to the health of consumer. Likewise, the milking process could have altered factors that are not contemplated in the study due to the ignorance of the producers during this proceeding., this can effect in the partial multiresistance of certain antibiotics found in the investigation.
