dc.description | The objective of this work was to compare two techniques for brewing ale type Raspberry Stout Ale. For this beer was elaborated using two techniques to flavor, the first technique was to add red fruits in the boiling process, the second technique was added red fruits in the secondary fermentation was obtained theoretical yields of 72 percent for the two techniques, from of the elaborated beers acceptance tests were carried out to determine that the beer added red fruits in second fermentation obtained the best score surpassing the like of the hedonic scale (4.0). Finally, at the time of performing the cost benefit analysis at a microbrewery level, a B - C of 3.08 was obtained by granting a PVP of 1.77 dolars in a 335 ml bottle. | en |
dc.description.abstract | El presente trabajo tuvo como objetivo comparar dos técnicas para elaborar cerveza artesanal tipo Ale Raspberry Stout. Para ello se elaboró cerveza utilizando dos técnicas para saborizar, la primera técnica consistía en agregar frutos rojos en el proceso de ebullición, la segundo técnica se agregó frutos rojos en la fermentación secundaria se obtuvo rendimientos teóricos del 72 por ciento para las dos técnicas, a partir de las cervezas elaboradas se realizaron pruebas de aceptación para determinar que la cerveza adicionada frutos rojos en segunda fermentación obtuvo el mejor puntaje superando el me gusta de la escala hedónica (4.0). Por último al momento de realizar el análisis beneficio costo a nivel de una micro cervecería se obtuvo un B-C de 3,08 al otorgarle un PVP de 1,77 dólares en una botella de 335 ml. | es_ES |
