dc.descriptionAndes berry fruit is a crop of great importance in the Tungurahua province and nationally It is a non-climacteric fruit with a high commercial value, however, it is a product that has a high degree of perishability so it presents damages that affect the quality of the fruit during post-harvest and commercialization. At present there is a considerable amount of fruit that presents alterations in its chemical and physical characteristics. For this reason, the objective of this study is the characterization of postharvest and quantification of losses in la mora de castilla (Rubus glaucus BENTH), in farms of producers located in Canton Tisaleo, Tungurahua province. For this, a randomized block design statistical analysis was carried out with 6 treatments and 3 repetitions, where variables that characterized the physical and chemical quality of the fruit were evaluated at different harvest times. Among the physical variables were evaluated the weight (g), size (mm) and firmness (gf), where May is the harvest season that recorded the lowest value (269.9 gf). In the same way, the chemical variables such as pH, titulable acidity and total solids (Brix), obtaining as a result that the harvest time infers in the variable of total solids (Brix), where the harvested fruit in September and October presented higher Brix grade with 12.4 and 12.5 respectively. Like the acidity variables, May season presented the highest value of 2.93 percent and June the lowest with 1.94 percent. Simultaneously, the losses in fruit caused by biotic and abiotic factors were evaluated, where the weight of the fruit was analyzed, expressed as a percentage of the damages caused by microorganisms and insects, fruits crushed by manipulation and misplaced or incomplete fruits, obtaining as a result losses in weight that exceeded 2.3 percent and deteriorations in the fruit that surpass 35.81 percent.en
