Resumen : El objetivo de esta investigación fue analizar la aceptación de una bebida caliente a base de pitahaya (Selenicereus sp) y jengibre (Zingiber officinale) deshidratados, para lo cual se empezó determinando el tiempo y temperatura de deshidratación. A continuación, se establecieron tres formulaciones de distintas concentraciones para realizar el análisis sensorial a 30 consumidores de las ciudades de Quito y Santo Domingo y así conocer su preferencia. Una vez determinado el resultado, se realizó el análisis de vitamina C a la materia prima, la formulación y a la bebida; también, se analizó el contenido de fibra y potasio del producto deshidratado. Los resultados del análisis sensorial definieron que la formulación 13g de pitahaya 2 gramos de jengibre es la de mayor aceptabilidad. En cuanto a los análisis de laboratorio, el contenido de vitamina C en la pitahaya es de 45.45 mg/100g muestra, en la formulación de mayor aceptación es 45mg/100g muestra y en la bebida 2,03mg/100g muestra. Por otro lado, el contenido de fibra y potasio en el producto deshidratado es de 5,35g/100g muestra y 649,98mg/100g de muestra respectivamente. Para concluir, la formulación seleccionada por los consumidores demuestra que una dosis intermedia de jengibre influye en la aceptación del producto. Además, se reporta que el contenido de potasio en la formulación de mayor aceptación es representativo para la proporción de jengibre utilizado. Finalmente, se observa que existe una disminución del contenido de vitamina C siendo mayor en la materia prima y disminuyendo notablemente en la bebida.
Descripción : The objective of the project is to analyze the acceptance of a hot drink based on dehydrated pitahaya (Selenicereus sp) and ginger (Zingiber officinale). At first, the dehydration time and temperature were determined. Next, three formulations of different concentrations were established to continue with the sensory analysis to know the preferences of 30 consumers in the cities of Quito and Santo Domingo. Once the result was determined, the vitamin C was analyzed on the raw material, the formulation and the drink. On the other hand, the fiber and potassium content were analyzed in the dehydrated product. The results of the sensory analysis defined 13g of pitahaya 2 grams of ginger formulation is the one with the highest acceptability. Regarding laboratory analysis, the vitamin C content in pitahaya is 45.45 mg / 100g sample, the accepted formulation content is 45mg / 100g sample and the drink had 2.03mg / 100g sample. The fiber and potassium content in the dehydrated product is 5.35g / 100g sample and 649.98mg / 100g sample respectively. To conclude, the formulation selected by consumers shows that an intermediate dose of ginger influences the acceptance of the product. In addition, it is reported that the potassium content in the most widely accepted formulation is representative for the proportion of ginger used. Finally, it is observed that there is a decrease in the content of vitamin C, being greater in the raw material, notably decreasing in the drink.
