Descripción : The food industry requires maximizing the performance of processed products with respect to their preservation, for this the use of synthetic preservatives is a requent practice used to prolong the shelf life of food, leading to health problems for consumers. Today, consumers are looking for healthier food solutions, yearning for nutritious and healthy food. For this purpose, Food and Agroindustrial engineering has focused on the use of essential oils, their antifungal and antibacterial properties to provide a natural preservative in food. In this way, the present Degree Project adjusts with this research guideline, its general objective is the antifungal action of phenolic compounds (carvacrol and thymol) to replace synthetic preservatives sorbates in foods. In turn, it is proposed as a specific work to synthesize the theoretical foundations on the antifungal action of carvacrol and thymol, to characterize the potential antifungal action of these phenolic compounds as possible replacement of synthetic preservatives, to establish the processes and protocols as a viable strategy for the use of compounds phenolic as food preservatives, because the thymol is is capable of mitigating the fungal action of the microorganism B. cereus and L. monocytogenes with a MIC of 0,452 𝜇𝑙 𝑚𝑙−1, against him E. coli with a MIC of 0,336 𝜇𝑙 𝑚𝑙−1; the Staph. aureus with a MIC de 0,183 𝜇𝑙 𝑚𝑙−1 and mitigate the S. typhimurium with a MIC of 0,0565 𝜇𝑙 𝑚𝑙−1. While carvacrol mitigates the B. cereus in a MIC of 0,542𝜇𝑙 𝑚𝑙−1; the L. monocytogenes with a MIC of 2,685𝜇𝑙 𝑚𝑙−1; the E. coli with a MIC of 2,611𝜇𝑙 𝑚𝑙−1; the Staph. aureus with a MIC de 0,312 𝜇𝑙 𝑚𝑙−1 y la S. typhimurium con un MIC de 0,224 𝜇𝑙 𝑚𝑙−1.
