Resumen : En el mundo de las bebidas juega un papel importante el gusto de cada persona, con el presente estudio se pretende rescatar a la bebida que según la historia y la mitología griega atribuyen como la primera bebida alcohólica consumida por el hombre, según registros existió antes del vino y la cerveza, considerada como un producto energético de sabor agradable y dulce; el objetivo del proyecto es evaluar física, química y organoléptica al hidromiel a base de miel de abeja sabor a mora como una bebida sensorialmente aceptada por los consumidores de bebidas alcohólicas. Desarrollar la industrialización y aprovechamiento de la materia prima de gran valor nutritivo e incentivar la producción apícola de la zona de estudio y el resto de provincias del Ecuador, estrechando los lazos entre apicultura y agricultura. Al ser el hidromiel una bebida fermentada a base de miel, este es el ingrediente clave, en cantidad y aporte de sabor al perfil final del producto. Por ello su elección, al igual que ocurre con la levadura, será una de las dos decisiones que definirán como será nuestro producto final. El estudio se realizó en el laboratorio de Análisis de alimentos de la Universidad de las Américas Sede Queri en la ciudad de Quito, a este laboratorio se llevó la materia prima para realizar el proceso de producción de la bebida hidromiel, análisis y medición de características físico, química y sensoriales. La segunda fase se realizó la evaluación sensorial a consumidores de bebidas alcohólicas de la ciudad de Quito. Se trabajó con un diseño completamente al azar, el DCA, se realizó la fermentación con cuatro tratamientos y tres repeticiones utilizando diferentes dosis de levadura quedando el grado alcohólico final dentro del rango de bebidas alcohólicas de la norma NTE INEN 371, siendo su grado alcohólico para tratamiento 1 de 10,5; tratamiento 2 de 11,8; tratamiento 3 de 14 y tratamiento 4 de 17, según su densidad quedando tratamiento 1 y 2 hidromiel semiseca y tratamiento 3 y 4 hidromiel seca. Con la evaluación sensorial realizada a los consumidores se determina el tratamiento 3 con mayor aceptación en sabor, color y aroma, también mencionan que el tratamiento 1 su sabor es similar al champagne. El hidromiel resulta de la mezcla de miel, agua y levadura elaborada a temperatura constante de 20 grados Celsius, la miel de abeja tuvo 82 grados Brix, y el mosto con 24 grados Brix, pH de 3,5, densidad de 1090, el proceso duró 45 días, obteniendo una bebida alcohólica fermentada preferida por los consumidores de bebidas.
Descripción : In the world of drinks, the taste of each person plays an important role, with the present study the aim is to rescue the drink that according to history and Greek mythology attribute as the first alcoholic drink consumed by man, according to records it existed before the wine and beer, considered an energy product with a pleasant and sweet taste; The objective of the project is to evaluate the physical, chemical and organoleptic properties of blackberry flavored honey based mead as a drink that is sensory accepted by consumers of alcoholic beverages. Develop the industrialization and use of raw materials of great nutritional value and encourage beekeeping in the study area and the rest of the provinces of Ecuador, strengthening the ties between beekeeping and agriculture. As mead is a fermented honey based drink, this is the key ingredient, in quantity and flavor contribution to the final profile of the product. For this reason, your choice, as with yeast, will be one of the two decisions that will define how our final product will be. The study was carried out in the Food Analysis Laboratory of the Universidad de las Americas Queri Headquarters in the city of Quito, the raw material was taken to this laboratory to carry out the production process of the mead drink, analysis, and measurement of physical characteristics of chemical and sensory. The second phase was the sensory evaluation of consumers of alcoholic beverages in the city of Quito. A completely randomized design like the DCA was used, fermentation was carried out with four treatments and three repetitions using different doses of yeast, leaving the final alcoholic degree within the range of alcoholic beverages of the NTE INEN 371 standard, being its alcoholic degree for treatment 1 of 10.5; treatment 2 of 11.8; treatment 3 of 14 and treatment 4 of 17, according to their density, leaving treatment 1 and 2 semi dry mead and treatment 3 and 4 dry mead. With the sensory evaluation carried out on consumers, treatment 3 with greater acceptance in flavor, color and aroma is determined, they also mention that treatment 1 its taste is similar to champagne. The mead results from the mixture of honey, water and yeast made at a constant temperature of 20 Celsius Degrees, the honey had 82 Brix, and the must with 24 Brix, pH of 3.5, density of 1090, the process lasted 45 days, yielding a fermented alcoholic beverage preferred by beverage consumers.
