Descripción : The company where the present project was carried out has five production lines, which are derived from sauces, jams, vinegars, juices and ajís, where it was identified that the most relevant product for the company in recent years has been mayonnaise, due to its high production and sales rates. Taking into account the aforementioned, the analysis was carried out to optimize the mayonnaise production process, since it was found that there are certain factors in this line that affect the achievement of market demand. Being the product with greater interest for the company, it has a series of processes, which need to be evaluated, controlled and improved, due to its high demand for productivity. This has led to search tools that allow this evaluation, control and improvement, to increase their levels of profitability for both the company and its stakeholders, that is why it has required the application of Lean tools such as the Value Stream Mapping (VSM) and Overall Equipment Effectiveness (OEE), which will allow a more detailed study of those factors that are generated waste in this line, to identify possible solutions that provide an important impact for the elimination of said factors. In this way and through complementary techniques such as flow diagrams, Paretos, Ishikawas, wire diagram, among others, necessary information will be collected from the system that makes up the production of this product, so that the weight of the implementation will be determined of these Lean tools for the organization, and to know the increase that will be expected in cost - benefit for the short and medium term.
