dc.descriptionThe aim of this work was to develop a nutritional supplement based on lupine protein aimed at athletes. For this, the isolated protein of the lupine was extracted through the isoelectric precipitation method, which obtained a weight yield of 42.54 more less 0.63 and a total protein amount of 43 percent. From the process of protein and lupine isolation, a liquid supplement was formulated, which was then spray dried having a high amount of protein, covering 38.16 percent of VDR per serving size. An acceptance test was made in which athletes had to try two different liquid formulations that varied in the amount of berry used as a flavoring. Two diameters of the needle of a Spray Dryer were also evaluated in order to obtain the powder supplement. When performing the analysis of variance in the Statgraphics program, in none of the two cases presented significant differences, meaning that neither the amount of berry nor the size of the particle influenced on the level of acceptance of the product. However, based only on the averages obtained from each treatment, a higher score was obtained by overcoming the like of the hedonic scale (4.0) in the liquid supplement with greater amount of blackberry and in the supplement dried by atomization with needle diameter of 1.0mm. The acceptance tests showed that the surveyed athletes did liked the developed supplement. Al last, when performing the cost-benefit analysis of the supplement a B/C of 2.30 dollars was obtained, granting a 25 dollars RRP to a 2-lb package.en
