| dc.description | This thesis aims to study the production of pussy, by means of which we can get to know the nutritional value of the (LupinusmutabilisSweet) chocho or tarwi, to know the qualities and characteristics of the legume and in this way to carry out the exportation of peeled Towards Spain. This Andean grain, is characterized by the content of protein, fat, carbohydrates, minerals and fiber which determines its value and importance in human food. Because of these qualities, puff is known as Andean soy. In Ecuador, Andean grain production occurs in the Sierra region, mainly in the provinces of Chimborazo, Tungurahua, Cotopaxi, Imbabura and Carchi, highlighting the province of Chimborazo as the largest producer. Therefore, the objective of this thesis is to introduce the consumption of pussy in the European continent based specifically on the Spanish market. | en |
