dc.descriptionThis final degree work is focused on the design and development of a new cookie which contains Ecuadorian endemic products applicable to the entity Maxcake which is a SME (Small and medium enterprise) bakery located in Quito. For the project development, was considered a market segment determined by the entity in accordance to its experience in the business, due to the COVID-19 pandemic, from which Ecuador is not exempt, was applied on-site and online surveys in order to collect data and samples, those results were essential to establish a benchmarking based on the entity´s requirements, while a “blind test” was used for the field trials using the appropriate biosecurity measures. In addition, with a QFD was established the essential attributes that customers look for. In that regard, based on the aforementioned methodologies, was gathered the customer´s needs, as well as the demand regarding to this type of products within the cookie market in Ecuador, as part of this work, was reviewed the production process of Maxcake cookies in order to establish a baseline and propose improvements as a result of the qualitative-quantitative statistic analysis to satisfy customer needs, and prepare a quality, innovative, healthy, and nutritional product, taking advantage of the entity´s industrial plant. Finally, was performed a cost-benefit study in order to determine expenses, cost, and investment that the proposal requires, and determine the ROI (Return on investment) as a performance measure in order to evaluate the entity´s profitability. The results obtained, final product and its acceptance by people, as well as an appropriate profitability level, allows to determine that the proposed changes would benefit the entity.en
