dc.descriptionThe objective of this study was determining the variation of the pH of saliva before and after consumption of potentially cariogenic food in 5 years old children of “Rosa Zárate elementary school” cantón Salcedo. The study is observational comparative analytical type. Materials and Methods: it was observed and analyzed the salivary pH values of a group of 66 students consisting of 32 boys and 34 girls aged 5 years old and stratified by sex. The pH of saliva was evaluated by using universal strips, 1 minute before and 5,10,20,30,40,60 minutes after consumption of three types of food such as candy (sucrose), fries (starches) and apples (fructose), each represents a different food group. Results: The pH of the saliva has a value of 7.06 after tooth brushing, which is within the range considered neutral in the literature, however it drops dramatically to 5.5 after 5 minutes of consumption of candy and apples, while that within 5 minutes of consumption of chips down to 6.1 and it recovered completely after 30 minutes. The pH value after consumption of apples is recovered after 40 minutes, while the pH after consumption of candy does not recover even after 60 minutes. Conclusion: It is concluded that the majority of analyzed food causes a decrease in pH, reaching critical values (5.5), the same can initiate demineralization of tooth enamel. The acidity of the saliva and its recovery time is closely related to the type of food consumption, it is the most potentially cariogenic one that contains sugar, so a sucrose diet may predispose to the development of caries. There was not a significant difference in the variation of pH between female and male so it is the same for both sexes.en
