| Resumen : | Levantamiento de un Inventario de Dulces Tradicionales presentes en el Centro Histórico de Quito. Para lo cual se realizaron dos tipos de investigaciones una bibliográfica y otra de campo. La investigación bibliográfica se basó en documentos, libros, revistas, entre otras delimitándose en la ciudad de Quito para dar a conocer la historia y definiciones de confitería, características del Centro Histórico y antecedentes de los dulces. La investigación de campo se basó en realizar visitas técnicas a los gestores gastronómicos y mediante encuestas recopilar la información de los dulces tradicionales. Se obtuvo información de los ingredientes, recetas y procedimientos además se consiguió conocer cómo heredaron el conocimiento acerca de estos productos. Se concluyó que un levantamiento de dulces tradicionales es sumamente trascendental debido a que se preserva la identidad y cultura gastronómica en el Centro Histórico. Además, es sustancial dar a conocer a las nuevas generaciones la confitería tradicional. |
| Descripción : | Stocktaking of Traditional Sweets in Quito’s Historic Center. For which, both bibliographic and field research was carried out. Bibliographic research was based on documents, books, magazines, among others demarcating itself in the city of Quito to publicize the history and definitions of confectionery, the Historic Centers characteristics, and the whole background of the sweets. Field research was based on technical visits to food managers and collecting information on traditional sweets through surveys. There was Information gathered on the ingredients, recipes, and procedures. In addition, how they inherited the knowledge about these products was also one of the investigation discoveries. It was concluded that a stocktaking of traditional sweets is extremely significant as it allows for the identity and gastronomic culture in the Historic Center to be preserved. Additionally, it is substantial to make traditional confectionery known to new generations. |
