Descripción : Biotechnology has developed numerous advances in different areas, especially in the area of plan biotechnology, where various plant breeding techniques have been standardized. However, the use of these techniques entails a high cost, causing the price of treated products to increase, which leads to the search for new methodologies that allow for lower costs, one of these is the use of pesticides at low concentrations. Indeed, the development of this work includes the morphological changes caused by the pesticides: Captán®, Karate® and Mancozeb® in seed of: chard, radish and vanilla at different concentrations. For this work, a completely randomized design DCA was made. The plots were distributed with their respective plants. During the development of the plants, non-destructive variables were measured and after the harvest of the crops, destructives variables were measured. In addition, a cytological analysis of the treated plants was carried out using their leaves. For the statistical analysis, an ANOVA assumption analysis was performed for each variable, in case of not meeting at least one assumption, a nonparametric analysis Kruskal Wallis and the test of Wilcoxon’s sign ranges were performed, while for the variables that did meet the assumptions, an ANOVA and a Tukey test were aplied. Finally, the organoleptic analysis was carried out by tasting the treated plants, in whichi the variables: smell, taste, colour, texture and consistency were evaluated by means of a slope. As a result of this research, it was obtained that the variables: legth and width of the stem, amount of sugar, biomass, leght and width of cells, width of stomas and the number of cells and stomas showed significant differences. However, the variables: amount of cholorophyll, number of leaves and length of stomas showed no differences. Finally, in the organolpetic analysis, it was obtained that testers prefer plants treated with pesticides compared to untreated plants.
