Resumen : Durante siglos las especias, han cumplido un papel vital en la cocina, porque contribuyen a conservar los alimentos y a hacerlos más apetecibles y digestivos especialmente en carnes y en pescados, donde en ocasiones podremos incluso reemplazar un poco de sal por especias que realcen el sabor de nuestros géneros principales en la cocina. A lo largo de esta investigación hemos descubierto las distintas variedades de especias que encontramos en el Ecuador, pero específicamente nos centramos en las especias autóctonas que se encuentran en la provincia Tsachila; donde tenemos especias como la chillangua, albaca de monte, achiote, pimienta negra, sal prieta. Encontramos una gran variedad de especias en su estado silvestre, existe mucho desconocimiento de los aportes que estas especias pueden dar a diferentes platos de la región, suelen centrar una especia en una preparación en específico por eso estamos muy limitados en descubrir nuevos aromas y aportes que podamos resaltar a nivel nacional e internacional. Santo Domingo de los Tsachilas no tiene un único platillo típico que lo distinga. Su oferta e identidad gastronómica es diversa, como su gente. El desayuno y la bandera Tsachilas, los chinchulines con verde, las parrilladas con yuca y lo maduros asados con queso rallado y sal prieta son el resultado de la mezcla cultural y la sazón de inmigrantes manabitas, lojanos, esmeraldeños, colombianos que poblaron la provincia desde 1970 y que ahora deleitan a los paladares más exigentes con sus platillos.
Descripción : For centuries, spices have played a vital role in the kitchen, because they help to preserve food and make it more appetizing and digestive, especially in meat and fish, where we can sometimes even replace a little salt with spices that enhance the taste of our main genres in the kitchen. Throughout this investigation we have discovered the different varieties of spices that we find in Ecuador, but specifically we focus on the native spices found in the Tsachila province; where we have spices such as chillangua, albahaca de monte, achiote, black pepper, salt brown. We find a great variety of spices in their wild state, there is a lot of ignorance of the contributions that these spices can give to different dishes of the region, they usually center a spice in a specific preparation that is why we are very limited in discovering new aromas and contributions that We can highlight nationally and internationally. Santo Domingo de los Tsachilas does not have a single typical dish that distinguishes it. Its offer and gastronomic identity is diverse, like its people. The breakfast and the Tsachilas flag, the chinchulines with green, the grilled with yucca and the ripe roasted with grated cheese and salt brown are the result of the cultural mixture and the seasoning of immigrants from Manabitas, Lojanos, Esmeraldas, Colombians ... who populated the province since 1970 and that now delight the most demanding palates with their dishes.
