dc.descriptionTrough the time, poultry industry has grown in a big scale, becoming one with the highest demanded across the world. This industry generates thousands of tons of organic solid waste per year, wich are ussually reuse like fertilizers. During the harvest process in medium and small companies, feathers have become one of the wastes with more environmental problems, because of their lack of treatment and hard degradation, which causes accumulation and changes in natural resources. Generally, this waste is use like raw material to produce feather flour in the balance diet of the animals by strain hydrolysis; however, it is not very digestible, wich can generate diseases. The purpose of the present project was to formulate of enzymatic hidrolysis for feathers that are generate in the harvest process and reduce the environmental impact that this waste causes. To achieve the goals established, a feather characterizacion had to be made, so that this could give a way to the protein preparation, wich consisted in carry out test with sodium sulfide and sodium metabisulfite at different concentrations and obtain the optimal conditions. The reach result, allowed the execution of the enzymatic hydrolysis tests under diferent concentrations of enzyme and time, giving an optimal percentage of hydrolyzed keratin. The project conclude that, the optimal enzyme concentration is 0.075 percent at 6 hours of treatment, percentage of 2.9 percent of hydrolyzed keratin.en
dc.description.abstractLa industria avícola con el pasar del tiempo, ha ido creciendo, convirtiéndose en unas de las que tienen mayor demanda alrededor del mundo. Ésta industia usualmente son reutilizados como abonos. En el proceso de faenamiento de las empresas de medicina y pequeña escala, las plumas, se han convertido en un residuo con una gran problemática ambiental, por su falta de tratamiento y difícil degradación, lo que ocasiona su acumulación y alteración de los recursos naturales. Éste residuo suele ser transformado en harina para la elaboración de alimentos balanceados de los mismos animales mediante hidrólisis de presión, sin embargo, no suele tener una digestibilidad alta, por lo que puede generar enfermedades. El presente trabajo de titulación tuvo como finalidad formular un tratamiento de hidrólisis enzimática para las plumas generadas en el proceso de faenamiento y así, disminuir el impacto ambiental causado por éste residuo. Para lograr el objeto planteado, se efectuó una caracterización de las plumas para posteriormente realizar una preparación de la proteína, la cual, consistió en efectuar pruebas con Sulfuro de Sodio y Metabisulfito de Sodio a distintas concentraciones y así, obtener las condiciones óptimas. El resultado conseguido permitió la ejecución de las pruebas de hidrólisis enzimática, bajo distintas concentraciones de enzima y tiempos de reacción y de ésta manera, obtener un porcentaje óptimo de hidrolizado de queratina. Se concluyó que la concentración de enzima óptima para el proceso de hidrólisis es de 0,075 por ciento a las 6 horas de tratamiento, con un 2.9 por ciento de queratina hidrolizada.es_ES
