Descripción : The aim of this study is to determine the changes in the concentrations of serum iron, hemoglobin, transferrin and ferritin before and after supplementation with milk of cow versus milk of cow fortified with Iron, Zinc and vitamin A, in children 6 to 10 years old of an educational unit, the rural sector of Quito during the period of six months. This study is quantitative, experimental, and prospective and lengthwise; the study population was 328 children from 6 to 10 years old. Two blood samples were obtained before and after supplementing with milk of cow and milk of cow fortified with iron, zinc and vitamin to get the biochemical indicators; these expose the results of serum iron, hemoglobin, transferrin and ferritin. The results of the study acquired in school reflects an increase in hematological parameters of serum iron, hemoglobin and transferrin, while in ferritin values was observed a decrease, however these data are maintained within the benchmarks. The results were obtained after receiving supplementing with milk of cow and milk of cow fortified with iron, zinc and vitamin A. In the Schools supplemented with milk of cow were increased serum iron values, it went from an average of 88, 63 ug/dL to 98, 23 ug/dL, the hemoglobin increased by an average of 13,91g/dL to 14, 26 g/dL, the transferrin values increased by an average of 257, 5 ug/mL to 291,5 ug/mL, while ferritin values decreased from an average of 57,6ug/L to 46.6ug/L ; in the schools supplemented with milk of cow fortified with micronutrients (Iron, Zinc, vitamin A) the serum iron increased in an average of 91,61 ug/dL to 94,59 ug/dL, the hemoglobin values increased by an average of 13,87 g/dL to 14,27 g/dL, the transferrin values increased by an average of 256 ug/mL to 292 ug/mL, while the ferritin values decreased from 57,30 ug/L to 49,4 ug/L. In assessing the baseline hematological parameters of chosen schools for this study, it was evident that there is no iron deficiency and consequently anemia.
