Resumen : El trabajo de titulación del Centro gastronómico basado en el movimiento Slow Food, está ubicado en La Tejedora distrito creativo en Cumbayá, en su interior existen varios galpones, el bloque C actualmente cuenta con locales arrendados y un estacionamiento, el área del mismo será aprovechada para la propuesta interiorista donde se pueda conocer y practicar la filosofía que combina placer y conocimiento que representa al movimiento Slow Food. La carencia de un restaurante que utilice producto local de temporada evite generar desperdicios y sea honesto en el uso de materiales que su vez se integre al su entorno y se pueda compartir conocimientos con momentos fuera de la vida ajetreada de la ciudad apoya al proyecto arquitectónico interiorista del centro gastronómico que promueve slow food para ampliar espacios principalmente diseñados para desarrollar actividades en torno a la preparación y degustación de platillos saludables, apoyando así al nuevo mercado que apuesta por experiencias culinaria que se preocupa por el espacio interior del establecimiento. Es así que se toma como concepto para el centro gastronómico va el Convivium materializado en las manos y su geometrización a través de su forma en una mano articulada representando el trabajo manual y el compartir que es la filosofía slow food. El proyecto de 601 m2 está organizado como una agrupación de volúmenes distintos pero interconectados, cada uno con una función particular, al ser una planta en su mayoría abierta se distinguen los espacios por medio de materialidad y cromática. En una esquina se encuentra la cocina y el salón, que fluye hacia el área de la entrada central con el ágora que está adyacente a los talleres y espacio comercial, todo esto está bajo el volumen de sala de exposición, espacio para el equipo de trabajo y la administración.
Descripción : The titling work of the gastronomic Center based on the Slow Food movement, is located in La Tejedora creative district in Cumbayá, inside there are several sheds, block C currently has leased premises and a parking lot, the area of the same will be used for the interior design proposal where you can meet and practice the philosophy that combines pleasure and knowledge that represents the Slow Food movement. The lack of a restaurant that uses local seasonal produce, avoid generating waste and be honest in the use of materials that in turn integrates with its surroundings and can share knowledge with moments outside the busy life of the city supports the architectural project Interior designer of the gastronomic center that promotes slow food to expand spaces mainly designed to develop activities around the preparation and tasting of healthy dishes, thus supporting the new market that focuses on culinary experiences that care about the interior space of the establishment. This is how the Convivium materialized in the hands and its geometrization is taken as a concept for the gastronomic center through its shape in an articulated hand representing manual work and sharing that is the slow food philosophy. The 601 m2 project is organized as a grouping of different but interconnected volumes, each with a particular function, being a mostly open floor, the spaces are distinguished by materiality and color. In one corner is the kitchen and the living room, which flows into the central entrance area with the agora that is adjacent to the workshops and commercial space, all this is under the volumen of exhibition hall, space for the work team and the administration.
