dc.descriptionThe objective of this project is to design a HACCP system for processing coffee Coffea arabica of the company La estancia de pancho, which is dedicated to the production of green coffee and roasted coffee. Likewise, its microbiological quality and levels of ochratoxin a in roasted coffee are specifically measured. Based on the guidelines established by the Codex Alimentarius to obtain a HACCP system, the system manual is made where the activities in the processing plant are implemented to achieve the HACCP certification and achieve participation in demanding markets. On the other hand, due to the critical control point deciphered, the microbiological quality of molds and yeasts of the roasted coffee bean is measured, as well as the analysis of the level of mycotoxin ochratoxin A produced by the molds by an inadequate management of Good Agricultural Practices, specifically the control of the final humidity of the grain no greater than 12 percent to verify if the product complies with the regulations for roasted coffee of the NTE INEN 1123, 2016 necessary for its export. In addition, a statistical analysis was carried out using the completely randomized design for the mold and yeast variables and ochratoxin A in order to know if there are differences or not in the treatments regarding the number of colony forming units, gram and micrograms, kilogram respectively. Finally, a stability test to establish the shelf life of roasted coffee beans.en
dc.description.abstractEl objetivo del presente proyecto es diseñar un sistema HACCP para el procesamiento de café Coffea arabica de la empresa La estancia de pancho, que se dedica a la producción de café verde y café tostado. Así mismo, de forma específica se mide su calidad microbiológica y niveles de ocratoxina A en el café tostado. Con base en los lineamientos establecidos por el Codex Alimentarius para obtener un sistema HACCP, se realiza el manual del sistema donde se implementan las actividades en la planta de procesamiento para conseguir la certificación HACCP y alcanzar la participación en mercados exigentes. Por otro lado, debido al punto crítico de control descifrado, se realiza la medición de la calidad microbiológica de mohos y levaduras del grano de café tostado, así como el análisis del nivel de la micotoxina ocratoxina A producida por los mohos por un inadecuado manejo de Buenas Prácticas Agrícolas, específicamente del control de la humedad final del grano no mayor al 12 por ciento para comprobar si el producto cumple con la normativa para café tostado del NTE INEN 1123, 2016 necesaria para su exportación. Además, se realizó un análisis estadístico utilizando el diseño completamente al azar para las variables de mohos y levaduras y ocratoxina A con la finalidad de conocer si en los tratamientos hay diferencias o no en cuanto a la cantidad de unidades formadoras de colonias gramo y microgramos kilogramo respectivamente. Finalmente, una prueba de estabilidad para establecer la vida útil del café tostado en grano.es_ES
