Descripción : For many years, honey has been used for several medicinal applications. Due to the antioxidant and antimicrobial properties of honey, it has been possible to treat several conditions such as wounds or infections. The aim of the present study was to determine the chemical composition, antioxidant and antimicrobial properties of two types of honeys belonging to the Andean region of Ecuador and its relationship with floral origin. Its physical-chemical parameters were analyzed, such as: color, pH, humidity, diastase index, hydroxymethylfurfural, electrical conductivity and ash content. Within the bioactive compounds, the polyphenolic composition, total content of amino acids, carotenoids and flavonoids were analyzed. The total antioxidant capacity of honey bee was studied according to the reduction capacity and free radicals uptake, and also for the protection capacity of lipid membranes of human red blood cells against lipid peroxidation. The results of the study allowed to classify honey as monofloral for avocado and eucalyptus according to the pollen content analysis. Both honeys presented physical chemical values within the range established by international quality standards for tropical honeys. The content of bioactive compounds varied significantly according to the floral origin, where the highest values were found in avocado honey dark amber honey. These values correlated with the total antioxidant capacity and protection capacity against lipid peroxidation, since darker honeys avocado honey showed the highest values of antioxidant activity and a high protection capacity against lipid peroxidation compared to eucalyptus honey. Likewise, avocado honey showed greater inhibition of preformed biofilm and inhibition of biofilm formation using two bacterial strains Staphylococcus aureus CAMP and Klebsiella pneumoniae KPC 609803 with respect to clear honeys eucalyptus honey that showed less inhibition. In this way, a positive correlation was found between the polyphenolic compositions vs. color vs. total antioxidant capacity vs. antimicrobial capacity. The study made it possible to demonstrate that honeys are a natural source rich in bioactive compounds with biological properties of great medicinal importance.
