Descripción : Foodborne diseases (ETS) are a major challenge for global public health. Estimating that 1 in 10 people get sick every year and about 420,000 die for this reason. These are caused by the consumption of water or food contaminated by infectious agents such as fungi, viruses, parasites and bacteria. Among bacteria is Escherichia coli, which is generally not harmful to humans, however, there are pathogenic serotypes such as E. coli O157: H7, which in 16 percent of cases causes hemolytic uremic syndrome (HUS) that can be mortal. The present investigation pretended to determine the prevalence of Escherichia coli O157: H7, in ground beef, in the municipal markets of Quito, evaluating the presence of this bacterium with specific culture media, biochemical tests and a specific strip kit for E. coli O157. Obtaining as results of the 50 samples taken, 100 percent were positive for the presence of enterobacteria, which are considered pathogenic for humans; In the indole test 98 percent was positive for the presence of E. coli that has limits in the norm NTE INEN 1346, reason why it is necessary to realize a bacterial count for its later evaluation; Gram staining in all samples existed the presence of both Gram Positive and Gram Negative bacteria and 100 percent were positive in the rapid strip test to identify the presence of E. coli O157. Concluding that there was presence of E. coli O157 and its other types of H that also have virulence factors, and the possible presence of E. coli O157: H7, however, it is recommended to perform molecular tests for specific bacterial identification, without discard a possible cross-contamination by the high content of positive results. Another important result was the possible presence of Salmonella typhimurium in 16 percent of the samples, concluding that they are not appropriate for human consumption, under the norm NTE INEN 1346 that declares total absence, so it is advisable to improve food handling in the municipal markets of Quito.
