| dc.description | Thru an analysis it has been determined that tuna fish has a big potential for industry purposes, as al! Of the fish can be used. However, today are used only the clean cuts for packaging, wasting in the industrial supply chain some of its sub products such as tunas fakes. Tuna's fakes are small pieces of meat joined to fishes' bones, so they need a mechanical process in order to be extracted. For that reason, that meat is reduced to small uniform portions, so people don't like them as plain cuts of meat like tuna's chunks or tuna's bellies because the f1akes are not as good looking. Because of such problem, tuna's f1akes have a lower market price than tunas meat or bellies, therefore today are used only to reduce industrial process cost. Therefore, f1akes can be converted into a potential raw material for new industrial process in the tunas supply chain. | en |
