Nowadays children consume foods rich in sugar, such as sticky foods that participate in the decay process due to the composition, prolonged retention, high sugar content and salivary pH as well as the time of ingestion, especially if it is between meals, that causes the increase in the production of acids and its elimination in the oral cavity is slower. The purpose of this investigation was to determine the salivary pH variation before and after the intake of three different types of adhesive foods (cornflakes, cookies and toast) with high sugar content in children from six to 11 years of age. 60 children were selected and divided into 6 groups of 10 children each. We proceeded to take the salivary pH sample after brushing each child and after eating the respective food which was taken at different time intervals (10, 15 and 20 min). As a result, it was observed that both boys and girls recover salivary pH at 10 min with a value of 7.04, while at 15 min the pH goes down with a value of 6.57 for girls and 6.89 for boys and at 20 pH returns to normal with a value of 7.00 for the female gender and 6.96 for the male gender. Therefore, the food that is less harmful to children is the cornflakes that has pH 0 and there is no alteration in pH, which does not happen with cookies and toast because its pH is one, which is considered as an acid ph. Adhesive foods (cornflakes, cookies and toast) contain carbohydrates and sucrose, which causes a drop in pH because they remain attached to the teeth after consumption.en
