Descripción : The implementation of traffic light food label system, in November 2013, INEN RTE: 022 forces to food industries in Ecuador, the mandatory declaration about the content of total fat, sugar and salt in the processed food through a color graphic system. This study is focused on assessing the use of traffic light rating system on food, also knowing the consumer acceptation related to the implementation and analyzing the frequency of traffic light rating system use among the consumers of different parishes such as Calacalí, San Antonio, Pomasqui, Cotocollao, Ponciano, Comité del Pueblo, El Condado and Carcelén. This study is split on two phases, the first; one was a quantitative study, which includes two sections: in the section A a survey of 14 questions was applied to 69 people, in the section B, a simulated purchase was carried out with 16 participants and 20 pairs of aliments. Besides, a selection of six different aliments for a nutritive lunch was performed. The second phase was a qualitative analysis through the use of a guided conversation and the technique: What happens if? In order to determinate the acceptation in the consumers of that district. As a result, it was possible to determinate that 78% of surveyed identified the composition of nutritional label, 39% of people stated they do not read (almost never and never) the nutritional label. The reasons, they expressed included they are not interested in and do not understand. As for the presence of the food label in the products, 55% showed that less than a half of their products, were selected with the traffic light rating system. 76% affirmed they were benefited with this implementation. It was possible to know consumers do not use the traffic light rating system at the moment of choosing a product in the simulated purchase. It concludes that, although consumers feel they are benefited with the traffic light rating system, do not use at the moment of the purchase do to the fact that, in some cases, they are not even interested or they do not understand it. Despite the fact that most of residents correctly identify the label system.
