dc.descriptionBreast milk is the first natural food the newborn receives because it provides energy and nutrients in the first months of life; It is produced by the mammary gland and consists of nutrients and immunological substances, hormones, enzymes, immunoprotective cells and growth factors. Glutamate is the mos abundant free amino acid free form, the concentration of free glutamate in breast milk is 1,339-2,157 mol \ L; the main functions are to aid the stimulation of the differentiation of the intestinal mucosa, as an intermediary in the acid cycle and to allow immunological modulation at the gastrointestinal level. Milk Banks are specialized centers for the promotion, protection and support of breastfeeding and are responsible for collecting milk from donor mothers to process and distribute newborns who are hospitalized. The Ministry of Public Health of Ecuador created the Network of Human Milk Banks with the pilot project started at the Hospital Gíneco-Obstétrico de Isidro Ayora (HGOIA) and subsequently created the last six milk banks in the different provinces of the country. Our study consisted of two phases, a phase of review of the state of the art on the function of free amino acids in the milk material and a second phase in which a descriptive, transversal, observational and prospective study was carried out on the Functioning of Milk banks in Ecuador. Results: The state of the art of amino acid functioning was obtained through a bibliographical review of 15 medical scientific articles where the detailed bibliography is evidenced and through a survey of milk bank staff on the functioning of breast milk Related to the performance of the Brazilian red was determined to be 80 percent. Conclusion: The milk banks in Ecuador adhere to most of the operating results to the regulations established by the national health authority, but not yet met with certain details such as the correct pasteurization of milk collected, including women donors with certain infections, lack of records and absence of personnel for the collection of a domicile on all financial limitations.
