Descripción : The main objective of the actual work is to show the feasibility to implement a business plan based on the elaboration and commercialization of pies and cookies made out of quinoa and linseed for diabetics. In order to carry out this research, it was first necessary to study the external environment and the one of the industry, which proved favorable. There are two major factors, one is that the number of people with diabetes in Latin America is increasing, and it is expected to grow by more than 80 porcent for 2030, and the second is that consumption habits in baked goods have increased in Ecuador, especially the biscuits of which reach 12.7 porcent for the present year 2017. This is how Cautívate was created, the purpose of introducing these desserts is that people who has diabetes enjoy sugar free pastry products and also contributes to their diet. The methods that were used to conduct the market study were based on a qualitative and quantitative analysis which allowed to define the consumer preferences. The results obtained pointed out with precision the tastes of the target group. This people are 19 to 60 years old who has diabetes, they are located in the city of Quito and belongs to a middle class, middle high and high. They opted for a red fruit pie and almond chocolate cookies. On the other hand, for the production process it is required a baker and two assistants who are able to meet the demand. In terms of investment, USD 61,741 is needed for the project, it will be financed with 60 porcent by two partners and the remaining 40 porcent with equity capital. In addition, to obtain the sales of the pastry, the Bass model was applied. Afterwards, proceed to carry out the financial evaluation obtaining a NVP and IRR of USD14.793 y 35,01porcent respectively, a rate of return of 1,40 for the investor, the accounting recovery period is in the fourth year and therefore, the business plan is viable within the stablished period.
