Descripción : The immune system requires complex and specific interactions in such a way that a slight modification of these mechanisms makes them susceptible of interruptions or alterations that later give rise to immune dysfunctions such as uncontrolled inflammatory processes. The proinflammatory genes COX-2, Inos and NLRP3 intervene in the inflammation. Inflammation causes metabolic disorders therefore endogenous production of anti-inflammatory drugs is not enough for most people. Polyphenols have anti-inflammatory activity, in addition to a capacity to capture free radicals which cause oxidative stress, which is why they have beneficial effects on health as reducing the incidence of inflammation. In this study, ethanolic extracts at pH3 and aqueous a pH5 of Mortiño (Vaccinium floribundum Kunth) obtained in previous experiments were used. The extracts were tested on RAW264.7 cell line murine and the expression of the COX-2, UCP2, iNOS and NLRP3 genes was analyzed by RT-PCR. Likewise, the anti-inflammatory activity was determined by the production of nitric oxide because if there is an uncontrolled production of nitric oxide, alterations such as inflammation occur. It was determined that the aqueous extract at pH5 produces a greater anti-inflammatory effect therefore V. floribundum shows anti-inflammatory activity.
