The diabetes mellitus is a chronic disease the type metabolic which is characterized by a hyperglycaemia, as a consequence of a deficiency of secretion and action of insulin. The diabetes the type two is the most common in the people with obesity and the elderly as well with almost the 95 percent. This illness can disturb many organs including the oral cavity. The purpose of this research is to evaluate the pH of the saliva after chewing gum with recaldent and eating fresh cheese in patients who present the diabetes type II. At the same time, encouraging them to use these products to improve and maintain a good oral health. The study was performed in 30 women and men of the Association of Diabetes of Latacunga, where they were tested two times during a week: the first test was carried out after consuming chewing gum and the second one after eating fresh cheese. Then the saliva’s pH of all the participants was measured at different time intervals of 5, 20 and 40 minutes respectively starting from their normal pH. As a result, it can be determinate that chewing gum with recaldent and fresh cheese increased significantly the saliva’s pH after 5 minutes of consuming it, however, in the other samples it seems that while the interval of time grows the pH decreases, but it still remains higher than the initial one. In conclusion, both products are qualified to increase the salivary pH without difference between them.en
