Resumen : El documento audiovisual "Los Caminos de la papa y el maíz" muestra como los pueblos de la serranía ecuatoriana están íntimamente ligados en su cultura gastronómica por el maíz y la papa...
Descripción : The audiovisual document “Los Caminos de la papa y el maíz” shows how the different populations and people of Andean Highlands are related and linked to its gastronomic culture of corn and potato. Throughout the investigation we see the cultivation process of products as potatoes and corn. We also see the relationship the farmer has with the land, always keeping in mind the ancestral value of the process. The documentary also gives a short historical account of the origins of the products under investigation and their presence in America as well as making an analysis of different provinces, like Imbabura, Pichincha and Cotopaxi in the Andean Highlands. The documentary also addresses the food and nutritional status of potato and corn in the diet of humans in general and of Ecuadorians in particular. This all comes together to show the excellence of the Andean Ecuadorian culinary tradition and the benefits of maintaining this culture. They do this by awakening the senses of smell, sight and taste that induce the viewer to consume the ancestral food of Ecuadorians. This insightful piece of work allowed us to experience three months of exploration in Ecuador through the people of small towns like Imbabura, Pichincha and Cotopaxi, here the people were full of generosity, hospitality and had incomparable insight. Beyond that, what we feel and the intended message is, at all stages from the planting corn and potatoes to finding the ancestral dishes at our table are composed for a constant interplay of respect, memories and love.
