Descripción : This project was focused on the design and development of a drink, smoothie type, of avocado and vegetable oat milk. To do this we proceeded to conduct a market study which identified the potential demand of the target market in Quito. Furthermore, more efficient process for making the drink embodied in a process flow in which the most relevant parameters indicate control production was established; also experimental analyzes were performed to determine the optimum type of acidity regulator for the formulation of the product meets the Ph proposed by the Ecuadorian Institute for Standardization, in the analysis three treatments were made: A, B, C evaluated periodically for 35 days determining their pH, just as sensory evaluations were conducted, to thereby find the ideal formulation for the final product by statistical tests. Regarding the most significant treatment, treatment C, two nutrition analyzes were performed to determine the nutritional composition of the formulation, and a microbiological analysis in which the number of colonies of coliforms, molds and yeasts was identified by Petrifilms. In another aspect, a Mode and Effects Analysis of potential failures for product design from the activities most critical process, determining the causes, severity and likelihood of these occurring developed. Finally, an economic analysis on the profitability of the project by using the Net Present Value (NPV) of $235,33 and the Internal Rate of Return (IRR) that was 35,73%, concluding that the project is feasible, on the other side based on the costs breakven point of the project is 245.429 units, taking as retail price (RRP) $ 2.20, value 44% of the target population showed that he is willing to pay for a glass bottle, containing 250 mL of the drink avocado and oats
