dc.descriptionChonta has been historically identified in the Archidona canton of the Ecuadorian province of Napo as a link that connects its inhabitants with notions of abundance where the gastronomic emphasis it has acquired and allows it to go beyond the limits of its territory to model itself as an exemplary product worldwide. Understanding the properties of this plant and through a survey of information by key actors who use this product to explain much of the daily life of this zone, essential data has been collected through unstructured interviews and technical research, laying the groundwork for explaining traditional preparations, ancient techniques and general uses of the chonta in the canton Archidona without ignoring part of the diversity of other dishes, ecosystems and thoughts which do not necessarily use this plant but share the same context. Focusing on the variety of products from the area which the local inhabitants relate to them and take advantage of them at all stages of their development, an emphasis has been placed on preserving this knowledge, capable of drawing up certain guidelines focused on directing new projections for the local gastronomic heritage and its consequent dissemination to other environments at a national and international level. This research document highlights the versatility of the indigenous product of the Amazon which not only causes a link between the culture and the identity of the area but also a wide range of gastronomic and tourist possibilities that this Ecuadorian plant offers us.en
dc.description.abstractOtorgar una mayor prevalencia y visibilizar a las tradiciones gastronómicas y ancestrales que han caracterizado al cantón de Archidona, respetando la identidad que se ha forjado con el pasar del tiempo, para lograr una oportuna apertura y socialización de saberes entre los distintos pobladores de este cantón. Identificar la necesidad de intervención por parte de entidades gubernamentales, como motor impulsor de su propio patrimonio, lo que permitiría proyectarse con mayor objetividad sobre las oportunidades gastronómicas que derivan de su territorio, teniendo en cuenta que estas son respaldadas por legados con centenares de años, y a través de personas que intentan acoplarlas hacia un nuevo mercado gastronómico no solo a nivel nacional sino también internacional. Recopilar información local para desarrollar varios proyectos de levantamiento patrimonial de la zona, aprovechando la versatilidad de los distintos campos de desarrollo local, como una pauta para la elaboración de una guía gastronómica amazónica que incentive al turismo, promueva la participación de la comunidad y genere interés en los visitantes para aprovechar y difundir las riquezas que posee el cantón Archidona.es_ES
