| Descripción : | The present degree work is based on the redistribution of areas within a food production plant, in its line of dehydrated fruits, through the Systematic Layout Planning (SLP) methodology, to avoid cross contamination, which is the main problem of this business. For this, the separation of the three production areas, raw material, process material and final product, was carried out and a flow of materials was proposed that reduced the distances of the current material transported, which was reflected in a reduction in transport by 45.63 percent. A study of times and movements was also carried out that allowed finding the bottlenecks of the company and opportunities for improvement within the process. Through line balancing, unnecessary tasks were eliminated and certain activities were modified, thereby reducing 28.38 percent of the production time of a batch of dehydrated fruit, the current production time being 26 hours and 58 minutes and the time obtained with the proposed redistribution of 19 hours and 19 minutes, increasing the company productivity from 0.33 kg of dehydrated fruit / hour to 0.47 kg of dehydrated fruit / hour. |
