dc.descriptionPichinchas northwestern territory is known for its wide variety of crops, including coffee. Nowadays there are several farmers dedicated to crop development and use of coffee (Coffea arabica), so there are sustainable development programs specialized in granting quality certifications to crops that fulfill specific requirements of the program thats been applied. In this work, a certain number of farms were rated based on a manual of conditions (set of compliance checklists), whose content expresses the macroprocesses and criteria applied in order to obtain a quality finished product. The information compilation was made through the structuring of four checklists (qualification methodology based on requirement compliance) that encompass the coffee macroprocesses; production, harvest, postharvest and storage, respectively. Each macroprocess covers a number of specific activities that are directly bonded to each macroprocess, where the activities carried out are applied as evaluation criteria in the respective compliance checklists, which are structured based on guidelines of regular agricultural practices and international market regulations provided by special entities, such as the INAO. The processes or activities carried out during the management of the crop influence on the quality of the coffee, which is why the purpose of complying with the manual is to ensure that these properties are preserved through the monitoring and control of each determined process. The activities identified are ordered in a general compliance checklist that includes the following processes: harvest method, selection, flotation, fresh grain storage, pulping, fermentation, washing, draining, drying, roasting, milling (optional) and storage of the roasted or ground grain. The processes are carried out under established parameters of humidity, time and temperature, and at the same time there are processes that require greater control (storage) due to the impact they generate on the coffees final quality. All the information collected to create the evaluation methodology comes out from primary producers, which ensures the applicability and adaptability of the compliance lists when verifying the conformity of the processes in a farm, without neglecting the objectivity and nature of the audited process.en
