Descripción : Poultry farming is a productive sector that has formed different kinds of technological innovation, all this in relation to animal nutrition and its welfare. Due to the high demand for egg consumption by humans, the population of laying hens in Ecuador has increased, improving their developing and production, as well as the nutritional composition of the eggs. Currently there are different breeding systems such as the Free Range, intensive and semiintensive that would directly influence the production of eggs. Therefore, it is important to determine differences in the productive parameters and nutritional composition of eggs produced by laying hens under certain breeding systems in order to understand the factors that influence egg production. In the present study, productive and nutritional parameters were determined in eggs produced by two lots, lot 1 was found under environmental enrichment "Free Range" (animal welfare), lot 2 was found under the floor, without environmental enrichment. The productive parameters analyzed were the number of eggs produced daily and total, average weight per egg and per lot. In nutritional parameters, the percentage of fat, protein and color of the yolk was analyzed. There was a significant difference in the average weight of eggs per batch and percentage of protein between the two lots, no significant difference was obtained in the other parameters analyzed. At the end of the study, it is concluded that the decision of the producer to choose the breeding system will be based on their convenience and convictions, despite this, the consumer is willing to pay higher values for eggs obtained from birds under animal welfare.
