dc.descriptionSynsepalum dulcificum is a plant from Africa, which has a fruit called a miraculous fruit. This name is given because of the glycoprotein (miraculin) that the berry contains, it has the ability of modify acidic flavors and making them sweet. To carry out the study, sessions were held every Monday for 4 months with trained judges of the Universidad de las Américas, giving them 0.03 0.05 and 0.07 g miraculous fruit diluted in 10 ml of water. Because the effect of miraculin lasts approximately one hour, just one solution was tested per day. The judges rated the sweetness and acidity they felt after ingesting the miraculous fruit in 6 times with 5-minute intervals. For the qualification two scales from 1 to 10 were used: one of sweetness, where 1 was nothing sweet and 10 very sweet. At the end of all the sessions, the data were tabulated, obtaining as a result the sweetness curves, in which it was possible to determine that the amount of miraculous fruit ingested does not have direct inference about the perception of the sweet taste. It was also found that 5 and 10 minutes after consuming the solution with miraculous fruit is when there is more perception of sweetness and after these times the intensity decreases proportionally. Another important result, that there is no significant difference between the sweetening power of stevia and the sweetening power of the miraculous fruit. This result was carried out by means of a group-paired test and an ordering test, whereby the judges chose among four solutions which was the sweetest, and subsequently taking the sucrose as a reference they gave a sweetening power to the other three samples, to finish a statistical test of t.student and corresponding pairs was used, through these tests it was obtained that there are no significant differences between the samples.en
dc.description.abstractSynsepalum dulcificum es una planta proveniente de África, la cual tiene una fruta llamada fruta milagrosa. Este nombre se le da ya que contiene una glucoproteína (miraculina) que tiene la capacidad de modificar los sabores ácidos haciéndolos dulces. Para llevar a cabo el estudio, cada lunes durante 4 meses se realizaron sesiones con los jueces entrenados de la Universidad de las Américas, entregándoles 0,03 0,05 y 0,07 g fruta milagrosa diluida en 10 ml de agua. Debido a que el efecto de la miraculina dura aproximadamente 1 hora, solo se probó una solución por día. Los jueces calificaron el dulzor y la acidez que sintieron después de ingerir la fruta milagrosa en 6 tiempos con intervalos de 5 minutos. Para la calificación se usaron dos escalas del 1 al 10: una de dulzor, donde 1 era nada dulce y 10 muy dulce. Al finalizar todas las sesiones se tabulo los datos obteniendo como resultados las curvas de dulzor, en las que se pudieron determinar que la cantidad de fruta milagrosa ingerida no tiene inferencia directa sobre la percepción del sabor dulce. También se encontró que 5 y 10 minutos después de consumir la disolución con fruta milagrosa es cuando más existe la percepción de dulzor y después de estos tiempos disminuye proporcionalmente dicha intensidad. Otro resultado importante que no existe diferencia significativa entre el poder edulcorante de la estevia y el poder edulcorante de la fruta milagrosa. Este resultado se realizó mediante una prueba pareada por grupos y una prueba de ordenamiento, mediante la cual los jueces eligieron entre cuatro soluciones cual era la más dulce, y posteriormente tomando de referencia la sacarosa dieron un poder edulcorante a las otras tres muestras, para finalizar se utilizó una prueba estadística de t.student y de pares correspondientes, mediante estas pruebas se obtuvo que no existen diferencias significativas entre las muestras.es_ES
