Descripción : Worldwide, overpopulation has induced the exponential growth of the industrial area; one of the most representative productions at present is the dairy industry. This industry is a potential source of contamination due to the production processes, it has, such as: pasteurization and homogenization; Thus, the residual water of a dairy industry has a high biological oxygen demand (BOD5) that can range between 2000 and 3000 mg O2.L and a chemical oxygen demand (COD) in a range of 2000 and 4000 mg O2.L; Similarly, high levels of dissolved solids, organic matter, oils and nutrients such as ammonia, phosphorus and minerals. The objective of this research was to evaluate the application of potato, cassava and plantain starch as natural coagulants in the treatment of wastewater from a dairy industry. The determination of the efficiency of removal of organic matter with natural coagulants was carried out using the parameters of COD and BOD5. Highlighting in the COD, the treatment with banana coagulant at a dose of 2 ml and with a percentage of 72.2 percent removal and, BOD5 had a better percentage of removal with the bio coagulant of potato 97.6 percent with a dose of 2 ml and 6 ml. On the other hand, to evaluate the use of natural coagulants with chemical coagulants, an experimental design was carried out by percentage; the best was in 75 percent aluminum sulfate and 25 percent natural coagulant, in this treatment the banana stood out with 91.3 percent turbidity removal. This research was carried out in order to eliminate dependence on the use of chemical coagulants that, in addition to having high costs, represent a problem for the environment due to the excessive generation of hazardous waste sludge.
