dc.descriptionThe study of the research was carried out in the laboratories of the University of the Americas, in order to take advantage of Sacha Inchi oil (Plukenetia volubilis) in the agroindustry. The oil was extracted in the worm gear, then made 5 fritters with potatoes at 180 degrees Celsius and 10 minutes of cooking for both Sacha Inchi oil and olive oil. Ten treatments were proposed, the first 5 belong to the five fritters with the Sacha Inchi oil and the remaining 5 to the frying with the olive oil. For this, olive oil was compared with Sacha Inchi oil through physical-chemical tests such as: peroxide index, iodine index and Kreis test. The statistical analysis of the data showed that there are only significant differences in the Kreis test for Sacha Inchi oil and Olive oil, thus concluding that the oils studied are similar and present almost the same behaviors as the frying process.en
