Descripción : The present work has been developed in Santana Brewing Company Sanbreco S.A., a company dedicated to the elaboration of craft beer, this factory is located in Quito -Ecuador. The purpose of this project is to identify and evaluate the risks to which its workers are exposed, focusing mainly on physical and chemical risks. The analysis of identification and evaluation of risks has been done in the different areas of work of the company: grinding, cooking, fermentation, bottling, pasteurization, labeling and packaging, dispatch, and all the infrastructure including the administrative office. For the development of this investigation, has been taken into account, the legal regulations of the Executive Decree 2393 which indicates to employers the guidelines they must take into consideration, to ensure the safety and health of their workers. The study has also been based on the following methodologies: INSHT methodology: Occupational risk assessment, for the identification and qualitative evaluation of risks; NTP 330: Simplified Method for evaluating Accident Risks, used for the quantitative evaluation of risks; and to strengthen the analysis, other standards have been used, such as: NTP 749: Evaluation of accident risk caused by chemicals., NTP 322: Estimation of the heat stress: WBGT index, and others. Once the risks have been identified, those that have the most significant evaluations have been selected, and measurements have been taken, with calibrated equipment, with purpose to have real numerical data, and these results compare them with established values in the standard and more accurately estimate the risks. Finally, with the results obtained from the measurements, improvement proposals were made for the company, focused on minimizing the risks to which the workers are exposed.
