Descripción : The regulation RTE INEN: 022-2013 of Ecuador had a change in 2013, where the food labeling was implemented. Whereby it establishes that all food processing industry should comply with the established regulation and declare the amount of nutrients used in its products sugar, salt and fat represented in a graphical method characterized by colors (red, green and yellow) according to the concentration used. The aim of the present work is to design and validate a didactic manual based on food labeling for food processors. It was validated with a strategic group chosen from two parishes belonging to the provinces of Pichincha and Cotopaxi, the first parish is Chavezpamba-Pichincha with a total of 25 people who attended the training and 26 people from the parish of Sigchos-Cotopaxi, training they were given on different days for each community, the manual was delivered to each one of the attendees and followed by the training that was carried out with the help of a presentation (power point, 2012) explaining all the contents of the manual in a way simple and didactic. An evaluation was applied to the 51 participants after completing the training, the evaluation consisted of 23 questions covering everything taught. Several quantitative and qualitative analyzes of descriptive statistics were developed. The results obtained show that 66.22 percent of the community of Chavezpamba and 70.90 percent of the community of participants of the community of Sigchos assimilated adequately the content of the training based on the didactic manual of food labeling. It is possible to conclude that the participants, through training sessions and the didactic manual, managed to understand everything that concerns food labeling, as shown in the results presented.
