Descripción : Ecuador, is a very diverse country of flora and fauna, where there is freedom of worship and expression, thanks to this, the Ecuadorian diet is diverse. Ecuador is characterized by its wide variety of production, sale and export of some foods such as: grains, fruits, vegetables, among others. The present work, has the purpose of making a design of a production line of a gasified drink of arazá (Eugenia stipitata), to reach an exploitation of this crop where a third of the national production is discarded without any use. For the elaboration of the drink, it was used both pulp and sugar variables, using a completely randomized design (DCA) in 2 x 2 factorial arrangement obtaining four different formulations (A1Z1, A1Z2, A2Z1, A2Z2), each One of them was analyzed: pH, brix degrees, CO2 level, smell, color, flavor and texture. Finding significant differences (Tukey at 5%) and being the highest accepted, the A2Z2 formulation with respect to its flavor. Based on this, a production line was designed for the production of this beverage, taking into account the basic requirements for its development, the line design was in the form of "U". Finally, a financial analysis was carried out where it was known that the Price of production was $ 1.10 P.V.P. it was $ 1.55, the IRR was 28% at the equilibrium point of 9457 containers and for income was $ 14,658.44.
