dc.descriptionCotacachi land of culture and gastronomy, this canton is formed for two important parishes Quiroga and Imantag, considered the oldest parishes. Previously inhabited by their original Chificha culture, people identify themselves as Chifichas Indigenous. Quiroga and Imantag have a great traditional ancestral cuisine with more than a hundred years old, which is based on the use of grains, leaves tubers and seeds. Considered the healthiest cuisine since It is cooking processes are dry this means, use of small amounts of fat or in some cases without the addition of it for the preparation of their typical dishes. Through this project, we sought to develop a documentary research that collects their culture, traditions, festivals and special gastronomy, through the techniques of observation and interview, pondering the qualitative research method. Interviews were organized, delimiting a study group, cultural experts and gastronomic managers, from whom important and valuable information was obtained. At the end, technical files were made, where the information about their typical recipes is supported, as well as their history of the dish, utensils, way of elaboration, that serves as a source of information for future investigations.en
dc.description.abstractCotacachi tierra de cultura y gastronomía, de este cantón forman parte dos parroquias importantes Quiroga e Imantag, consideradas las parroquias más antiguas. Habitadas anteriormente por su original cultura Chificha, quienes las personas se identifican como Indígenas Chifichas. Quiroga e Imantag poseen una gran gastronomía tradicional ancestral con más de cien años de antigüedad aproximadamente, que se basa en la utilización de granos, hojas, tubérculos y semillas. Considerada la gastronomía más saludable ya que sus procesos de cocción son en seco, esto quiere decir, utilización de pequeñas cantidades de materia grasa o en algunos casos sin la adición de la misma para la elaboración de sus platos típicos. Mediante este proyecto, se buscó desarrollar una investigación documental que acopie su cultura, tradiciones, fiestas y es especial su gastronomía, a través de las técnicas de observación y entrevista, ponderando el método cualitativo de investigación. Se organizaron entrevistas delimitando un grupo de estudio, expertos culturales y gestores gastronómicos, de los cuales se obtuvo importante y valiosa información. Al finalizar se realizaron fichas técnicas, donde se respalda la información sobre sus recetas típicas, de igual forma su historia del plato, utensilios, modo de elaboración, que sirva como fuente de información para futuras investigaciones.es_ES
