Descripción : The culture of Nile tilapia (Oreochromis niloticus) in Ecuador had its development from the decrease in shrimp activity generated by the presence of the so-called white spot disease. The shrimp ponds since 2003 were widely used in the production of tilapia for export; However, as of 2008, the recovery of the shrimp activity caused a decrease in the production of tilapia for export. However, these conjunctural factors allowed the development of tilapia crops in other areas of the country such as the Amazon Region, particularly in the lower area of Napo province; of which is part, the canton Carlos Julio Arosemena Tola; same that, it has physical-chemical characteristics of the soil, temperature, and humidity, suitable for the cultivation of the species. The nutritional characteristics such as 16 to 20 percent of protein, only 1 to 1.6 percent of lipids, together with a caloric capacity of 348 to 435 kJ for each 100 g portion make it a product of high nutritional value, especially to spread in the Native population of the provinces of Napo and Pastaza that consume food of low protein and caloric quality due to their food habits. Other characteristics already elaborated in dishes such as its flavor and smell are turning it into a dish with cultural identification for the tourist. The aforementioned aspects have been the basis for the development of a feasibility Study for the creation of an industrial plant for slaughtering and filleting tilapia. The market study established as potential markets the cities of Puyo and Tena, it has been proposed an improvement in the productive process of cultivation and breeding in cylindrical tanks that would cause an improvement in the quality of the tilapia both by organoleptic characteristics and by time of cultivation and final weight of the product, additionally details the dimensions and characteristics of an industrial plant. The investment needed to build and operationalize a 216,160 kilograms processing plant for annual tilapia fillets reaches 258,206.79 dollars; The price 6.56 dollars of the kilogram of tilapia fillet shows that the project generates a profit of 65 percent on the unit cost of production.
