Descripción : This Project degree was carried out with the objetive of evaluating the inhibitory effect in vitro of guarango’s tannins (Caesalpinia spinosa Kuntze) and quinoa’s saponins (Chenopodium quinoa Willd) on Rhizopus sp., as an alternative of using sub-products of plant species and industrial wastes. The results indicate the potencial of the tannin which are contained in the aqueous extract obtained from flour of guarango dried pods on an important postharvest fungus as Rhizopus. The treatment that became effective and reliable corresponds to a concentration of 400 ppm in the first 12 hours of growth of the fungus with a percentage of inhibition corresponding to 4.14 percent. The inhibitory effect of the extract disappears while the development of the fungus in hours and days increases. In the case of the saponins, obteined from the quinoa grain of the Tunkahuan variety, no results were reported confirming the extract as an alternative to biological control over the Rhizopus postharvest fungus.
