dc.descriptionProcess improvement in a company is currently being considered a very important factor, a company must be changing and improving to offer better quality products, be more competitive, increase profits, eliminate waste, choosing suitable employers, reducing time, among other aspects. To achieve the proposed objectives, a process registry in the area of hams within JURIS CIA L TDA, is performed. We performed an analysis of processes, sub processes, and sequential activities that contribute to the mission of the organ ization. To implement an analysis and diagnostic of the present situation of the company, we use tools like lshihawa diagram, Design for Quality (DFQ), process prioritization through the Holmes matrix, influence - dependence tables, analysis of organizational importance and difficulty, value - added analysis, workload analysis, graphical analysis of process characteristics and components by means of graphical representation of those in the value chain, process maps, and flowcharts. The company works with top of the line machinery and highly qualified personnel for the completion of its products, which have acquired fame and prestige throughout recent years for its quality and flavor while also being much in demand by consumers. However according to the analysis certain problems and fallacies have been identified, like: cross between areas dueto lack of space, lack of better working space, waste for spices and condiments, lack of ham cooling, and lack of personal motivation. During this time sorne aspects have improved with the implementation of a larger cooling room, where all of pieces have better cooling and where turns are designated with better production planning. With the machinery reorganization and distribution proposal, time which was previously used mostly for the production of ham can now be used for other activities. The company is building a new factory, where this optimization proposal must be applied, counting on an adequate layout to obtain better results which will increase production quantity with better production times.en
